Recipe: Rich Fruitcake for Tea

Method

  1. Bring 400 ml of water to the boil and let the tea bag steep for 5 minutes
  2. Wash the lemon, grate the zest and squeeze the lemon
  3. Roughly chop the prunes and apricots into pieces
  4. Place the tea, lemon zest, lemon juice, chopped fruit and biscuit spices in a large saucepan, bring to the boil and simmer for 5 minutes to reduce it. Stir occasionally until the liquid has almost disappeared.
  5. Let the mixture cool down a bit and, in the meantime, heat the oven to 170 ° C (fan oven 150 ° C)
  6. Line the bottom and sides of a baking tin (20 x 30 cm or 25 x 25 cm) with baking paper
  7. Peel the banana and cut into thick slices
  8. Scoop 1 tablespoon of skimmed milk powder (or instant skimmed milk powder) from the package and dissolve it in 100 ml of water
  9. Put the sliced ​​banana in the food processor, add the eggs and 4 tablespoons of the dissolved milk and make a smooth consistent mixture
  10. Add the self-raising flour and blend it into a smooth, consistent batter
  11. Fold the batter into the soaked fruit
  12. Spoon the fruit batter into the tin and smooth
  13. Put it in the oven for 35 minutes (to check it is cooked, stick a skewer in the centre –  it should come out clean)
  14. Remove the pastry from the oven and let it cool for half an hour
  15. Take it out of the tin and place it on a cooling tray
  16. Cut it into slices
  17. Enjoy!

The cake can be stored in the refrigerator for a week, in a sealed container.
