Method
- Bring 400 ml of water to the boil and let the tea bag steep for 5 minutes
- Wash the lemon, grate the zest and squeeze the lemon
- Roughly chop the prunes and apricots into pieces
- Place the tea, lemon zest, lemon juice, chopped fruit and biscuit spices in a large saucepan, bring to the boil and simmer for 5 minutes to reduce it. Stir occasionally until the liquid has almost disappeared.
- Let the mixture cool down a bit and, in the meantime, heat the oven to 170 ° C (fan oven 150 ° C)
- Line the bottom and sides of a baking tin (20 x 30 cm or 25 x 25 cm) with baking paper
- Peel the banana and cut into thick slices
- Scoop 1 tablespoon of skimmed milk powder (or instant skimmed milk powder) from the package and dissolve it in 100 ml of water
- Put the sliced banana in the food processor, add the eggs and 4 tablespoons of the dissolved milk and make a smooth consistent mixture
- Add the self-raising flour and blend it into a smooth, consistent batter
- Fold the batter into the soaked fruit
- Spoon the fruit batter into the tin and smooth
- Put it in the oven for 35 minutes (to check it is cooked, stick a skewer in the centre – it should come out clean)
- Remove the pastry from the oven and let it cool for half an hour
- Take it out of the tin and place it on a cooling tray
- Cut it into slices
- Enjoy!
The cake can be stored in the refrigerator for a week, in a sealed container.
